I'm always on the look out for good sauces and dressings that aren't laden with cholesterol, saturated fat or calories... and these delicious homemade piquant peppers and tomatoes are just the thing. They add real taste to simple food like grilled fish or chicken, and they are delicious served with burgers 'n' baps too! As well as super healthy, this salsa is very easy to cook - just fling the peppers and tomatoes in the oven and sprinkle with some vinegar when they're cooked...
Line a baking tray with greaseproof paper
Wash and cut the Peppers and Tomatoes into big ish chunks
Lay them out on the baking tray and lightly brush with Olive Oil
Sprinkle with a little Salt and roast for 25 mins or so at 180˚c or until they are soft and starting to char around the edges
Remove from oven and sprinkle with 1 tbsp of Red Wine Vinegar
Leave to cool down and serve as a Salsa – with burgers, grilled chicken, fish, pasta etc
