Slice the onion & roughly crush the garlic
Chop your herbs (you want a good couple of handfuls of whatever you use)
Drain your beans – these are quick to cook so it is good to have everything to hand when you start cooking….
Fry the onion for a couple of minutes in a hot pan with a little Extra Virgin Olive Oil
Add your drained Borlotti beans and give them a couple of minutes before adding the garlic, stirring and turning off after another minute
Add the chopped herbs and mix – season and mix again
Serve the Borlotti Beans in a bowl, drizzled with lemon juice, olive oil and a couple of sliced peppers (you can buy these in jars – they are roasted red peppers with the skins taken off – delicious. Marinated and roasted peppers would also be good chopped with these beans)
Delicious on their own with flatbread, or as a side with lamb, chicken or fish
