Makes 12 Cookies…
Whisk the Egg, Sugar and Vanilla till creamy
Whisk for another minute or so, adding the Olive Oil
Fold or stir in the Cocoa, Flour, Salt and Baking Powder (maybe sieved?)
By this point the mixture will look very unlike Cookie Dough…. but don’t worry, just put the bowl in the fridge for a few hours to firm up
Pre-heat the oven to 170˚c
Line a baking tray with (good) greaseproof paper
Take a dessert spoon of the mixture, roll it into a ball and squash it into a cookie shape before dusting all over in Icing Sugar, pressing flat-ish, and putting on the tray
Give them 10 mins in the oven! Cool on a rack before eating
