Tomato & Caper Salad with Herb Dressing

This is a really special salad that goes with all sorts of things. A piece of grilled or oven baked white fish; a barbequed lamb chop; some cold roasted chicken; even a can of tuna tastes fabulous next to this quick, easy and healthy salad. It's the dressing that makes it special; that and tracking down some deliciously sweet and mellow tomatoes.

Ingredients

  • Lettuce Leaves
  • Tomatoes
  • Red Onion
  • Capers
  • Basil
  • Parsley
  • Garlic
  • Lemon
  • Dijon Mustard
  • Pepper
  • Olive Oil

Wash the Salad (some lovely spinach, rocket and lettuce leaves would be great)

Wash and quarter a few Tomatoes

Slice a Red Onion

Drain (or if they’re salted, wash) and dry a tablespoon of Capers

Lay the Salad leaves out, with the sliced Tomato, Onion and drained Capers on top

Make the Herby Dressing… Crush a clove of Garlic.  Add the juice of half a Lemon to the bowl and a big drizzle of Olive Oil.  Now add a big teaspoon of Dijon Mustard and a crunch of Pepper.  Whisk or stir, and taste.  You might prefer more Lemon or more Oil (but bear in mind that dressings will always taste stronger when they’re not actually on a salad; so it is good to keep some punch here, flavour wise…).  Lastly, stir in a handful of finely chopped fresh Herbs… Basil, Parsley, Chives – they’d all taste good here

Dress the Tomato & Caper Salad just before eating – and enjoy with a dollop of Homemade Mayonnaise if you have some…
