Little Gem & Walnut Salad

Walnuts are in season now, and they're delicious as well as nutritious. The wet and rainy weather this year has meant a particularly bumper crop (walnut trees have good years and bad years) so now is the perfect time to be sprinkling chopped walnuts all over pasta, salads and puddings... This salad has a classic kind of feel to it, with a wholegrain mustard dressing and a tiny little bit of chopped onion. It's delicious on its own, but is also very good served with cold meats or terrines; also with Italian dishes.

Ingredients

  • Little Gem Lettuce
  • Walnuts
  • Cucumber
  • Quarter of a Red Onion
  • Wholegrain Mustard
  • Lemon
  • Olive Oil
  • Honey

Wash the Lettuce

Slice some Cucumber

Very finely dice a little bit of Red Onion

Crack open some Walnuts and roughly chop a handful of them

Make some dressing… Whisk together 1 tsp Wholegrain Mustard; 2 tbsp Extra Virgin Olive Oil, half a tsp Honey and the juice of half a Lemon.  Taste and add more Lemon juice or Oil if necessary

To serve, arrange the Lettuce on a serving plate with the sliced Cucumber and chopped Red Onion.  Add a few good drizzles of Dressing and then sprinkle liberally with chopped Walnuts

A slice of cold Gammon is especially good with this Walnut Salad
