Steamed Veg & Orange Dressing

Greens are so good for you - although steamed and on their own aren't so exciting sometimes. Good vegetable sides definitely need a bit of something extra - this dressing is great for just steamed or boiled veg and goes super well with fish and chicken

Ingredients

  • Kale
  • Broccoli
  • Courgette
  • Spinach
  • Asparagus
  • 1 Orange
  • 1 Red Onion
  • 2 Cloves Garlic
  • Squeeze of Lemon Juice
  • Dijon Mustard
  • Olive Oil
  • Red Wine Vinegar
  • Mint & Dill

Steam your veg

Broccoli takes around 4 minutes – anything leafy less – and anything rooty more

I used Kale, Spinach, Broccoli, Asparagus and a Courgette chopped

Zest your orange into a reasonable sized bowl – then cut off the peel and chop the orange, getting rid of any pips or pith

Pour the juice left on the board into the bowl and keep the pieces of orange aside

Add your chopped onion, a couple of teaspoons of Dijon Mustard, 2 squashed cloves garlic, a tablespoon of red wine vinegar, a squeeze of lemon juice and a really long drizzle of good olive oil (maybe 4 tablespoons?) to the bowl and give it a good mix

Check your seasoning – add whatever you think it needs before finally adding your mint, dill and orange pieces.  Give it a mix again before serving all over your steamed veg…

We ate this with Dover Sole and Roast Potatoes; I think these vegetables would be great with a Pilav or Saffron Rice too.
