Pre-heat the oven to 180˚c
Line a baking tray with greaseproof paper
Wash and chop the Yellow Peppers into chunks – maybe 1 or 2cm square? Lay them out on the baking tray
Brush the Yellow Pepper pieces with a very little Olive Oil and sprinkle with a little Salt
Roast for 25 minutes or until starting to look a little chargrilled around the outside
In the meantime – wash the Romaine Lettuce and chop the Red Onion
Lay the Lettuce out in a fan – sprinkle with the chopped Red Onion
Let the roasted Yellow Peppers cool before serving them on the salad
A simple dressing is good with this – drizzle of Lemon or Lime Juice and a drizzle of Rape Seed Oil – maybe some Black Pepper
