Herby Chive Salad

Chives are one of the best varieties of herbs - they are absolutely delicious; like the perfect salad cross of spring onion and leek. Chives are also great friends to lots and lots of different things... smoked salmon, scrambled egg, frittata, rosti... In particular on a salad with a good dressing, they're great. Surprisingly easy to grow too (this, coming from a less than proficient gardener) - mine are sprouting already outside after a miserable winter in the cold with no love whatsoever. Garden fresh or bought from the shop, enjoy this healthy chive salad with almost anything!

Ingredients

  • Lettuce
  • Cherry Tomatoes
  • Red Onion
  • Cucumber
  • Chives, Chives and Chives

Wash and chop the Lettuce, Tomatoes, Red Onion and Cucumber

Lay the Lettuce out and cover with the chopped salad

Now wash the Chives carefully – pat them dry with kitchen paper – and chop into 2cm lengths, or thereabouts (use scissors if this is easier?)

Sprinkle the Chives over the salad and squeeze Lemon Juice over the whole plate

A quick drizzle of Olive Oil and you’re set to serve…

[I used Dill here too - you could add Parsley or Chervil too if you fancied a herbier dish...]
