Apple Coleslaw

This is a deliciously healthy coleslaw that tastes particularly good with chicken of nearly any kind... burgers, nuggets, BBQ chicken etc. The apple, cabbage, onion and carrot combo makes it a great side for seafood; some fresh crab and homemade bread would go really well.... and to demonstrate its huge 'dish-dexterity', this apple coleslaw also works a treat with game stews in the winter. How much more flexible and brilliant can one healthy coleslaw dish be?!!

Ingredients

  • 1 Apple
  • Half a Spring Letttuce
  • 2 or 3 Carrots
  • 1 Onion
  • 2 – 3 tsp Dijon Mustard
  • 2 – 3 tbsp 0% Greek Yoghurt
  • 1 tsp Homemade Mayo
  • Juice of Half a Lemon
  • 1 Clove Garlic, crushed
  • Pinch of Chilli Powder
  • Salt & Pepper

First, mix together the dressing… use 2 – 3 tsp of Dijon Mustard, 2 – 3 tbsp of 0% Greek Yoghurt, 1 tsp Homemade Mayo, Juice of Half a Lemon, 1 Clove Garlic, (crushed), a pinch of Chilli Powder and some freshly ground Salt & Pepper

If the dressing is a little thick – stir a tablespoon or so of water (or milk) into it and mix well to thin out a little

Next – in a food processor, grate the Carrot

Very finely slice the Apple, Onion and Spring Cabbage (I used a food processor again, but you could do this by hand with a knife… it just takes longer!)

Then mix the grated and sliced ingredients together in a large bowl

Add the dressing and gently stir everything around a bit to coat all the ingredients in the dressing

Leave to rest for a while in the fridge before you serve – and take it out 20 minutes before you eat

(Is also great the next day)

Enjoy with BBQ chicken, with turkey burgers or with some bean burgers
