Butter Bean Fritters

Absolutely delicious and based on a Vefa recipe for croquettes. These butter bean fritters are super good for you, low in cholesterol and really tasty with some saffron rice and tomato & onion salad...

Ingredients

  • 1 large and 1 small can Butter Beans
  • 4 – 6 Spring Onions
  • 1 Clove Garlic
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon of Natural Yoghurt
  • Handful of Parsley, chopped
  • Breadcrumbs – for mixing and coating

Drain the Butter Beans and puree in a food processor

Add into a large bowl with a handful of breadcrumbs, the chopped Spring Onion, Dijon Mustard, Parsley, Lemon Juice, crushed Garlic, the Yoghurt and some Salt & Pepper

At this stage you could also replace Parsley with Dill or Coriander… You could also add some chopped Red Chilli

Mix with your hands and shape into small patties

Coat each one in breadcrumbs before placing on a baking tray lined with greaseproof paper

Cook at 180˚c for 15 – 25 minutes (until golden)

[You could also fry these for 3 minutes on each side in a little hot Olive Oil.  Drain on kitchen paper before serving]

Serve with rice and salad, also some 0% Greek Yoghurt or Tzatziki.  These are also very good cold the next day as leftovers
