Butter Beans & Piquante Peppers

These delicious Peppadew peppers are really useful and are particularly good with any kind of bean... Beans themselves are brilliant for reducing cholesterol, so enough said...


  • Tin Butter Beans
  • 1 Onion
  • 1 Clove Garlic
  • Peppadew Piquante Peppers
  • Fresh Mint & Basil

Drain the tin of Butter Beans, slice the Onion, crush the clove of Garlic and chop the fresh Basil and Mint

Heat some Olive Oil in a pan and add the chopped Onions for a minute on a medium to high heat

Then add the Butter Beans and continue to cook for a couple of minutes until they are just starting to brown slightly

Lastly add the chopped Garlic and cook for a minute before squeezing Lemon Juice all over the pan

NB If you wanted to add a bit of spice to this, you could add some chopped fresh Chilli or some dried Chilli Powder… Smoked Paprika would give it a good twist with a BBQ too…

Serve in a dish with some Basil and Mint leaves, some torn up Piquante Peppers (and lots of Black Pepper!)

Delicious with burgers, pizza, grilled fish or chicken – also just some Pilav on its own…
