Get your fishmonger to gut the mackerel, which should have clear and bright eyes
With a knife, score a couple of lines down each side of the fish so there are more places for the marinade to stick (fishmonger could do this too)
Mix all the marinade ingredients together
Rub the marinade all over the fish, in particular into the scores and cavity of the fish
You can leave the fish for an hour or so before cooking, but you can cook immediately too
Grill, BBQ or Oven Bake at 180˚c – give the fish 4 to 5 minutes either side or 10 to 15 minutes in the oven
