Celeriac & Red Pepper Remoulade

Celeriac Remoulade is really delicious, and also goes brilliantly with lots of different dishes... it works with pizzas, pasta, grilled chicken, fish and even (slightly weirdly) beef stews. It is particularly tasty with BBQ'd meat, and is not only easy to make, but super healthy too. This version has an exciting little pinch of chilli, and some heart-healthy garlic too - both of which go particularly well with the red (or orange!) pepper, and make a nice change (remoulade wise). If you're feeling smokey; Smoked Paprika is indeed an excellent addition to this healthy remoulade recipe.

Ingredients

  • Celeriac (half a large one or a very small one)
  • Red Pepper
  • Fresh Red Chilli (optional)
  • 1 or 2 Cloves Garlic
  • 1 large tsp Homemade Mayo
  • 1 tsp Dijon Mustard
  • 2 tbsp 0% Greek Yoghurt
  • Rape Seed Oil
  • Pinch Chilli Powder
  • Lemon or Lime
  • Salt & Pepper

Very finely chop the Red Pepper and some fresh Red Chilli if you fancy it

Crush a clove or two of Garlic

Mix the juice of half a Lemon, 1 tsp Mayonnaise, 1 tsp Dijon, 2 (or 3) tbsp 0% Greek Yoghurt, a drizzle of Rape Seed Oil… If it is a little thick, add 1 or 2 tbsp water to thin the dressing

Chop or slice all the skin and root off the Celeriac (maybe give it a quick rinse & dry to make sure it is dirt-free!)

Grate the Celeriac finely in a food processor

Mix the grated Celeriac with the dressing mix and the chopped Red Pepper and Chilli in a large bowl.  If you like something a little spicier, add an extra pinch of Chilli Powder while mixing… also a pinch of Salt & Pepper

Taste; and add any seasoning you think it needs (Remoulade may benefit at this stage from extra Lemon Juice or Salt and Pepper)

This is particularly delicious with Fish dishes or as a side to Courgette Fritters
