Rocket & Red Onion

Admittedly slightly lazy by means of a salad - but this is genuinely excellent with lots of things, Italian food included; hence the Balsamic...

Ingredients

  • Rocket Leaves
  • Other Salad (optional)
  • Red Onion
  • Cucumber
  • Lemon or Balsamic Vinegar
  • Olive Oil

Slice the Red Onion and Cucumber

Wash, dry and lay out the Rocket leaves and other Salad

Cover generously with Red Onion and Cucumber slices

Drizzle with either Balsamic Vinegar or Lemon and some Extra Virgin Olive Oil

Enjoy with almost anything… pasta, pizza or maybe some roast chicken
