Peashoot & Kiwi Salad

A brilliant way of eating a bit more fruit; and kiwi in particular is a clever fruit, a good source of vitamin c, and generally very good for you... This salad is delicious with fish or rice; would also work with chicken.

Ingredients

  • Peashoots (Watercress would work)
  • Kiwi Fruit
  • Red Onion

 

Slice the Kiwi Fruit

Chop up the Red Onion

Spread the Peashoots out on a plate and lay the Kiwi and Red Onion over them

Dress with Lemon Juice and a drizzle of Olive Oil (Extra Virgin!)
