Vanilla Rice Pudding

Very easy to make, very tasty and all round a great winter favourite. For those of you who remember the kind of Rice Pudding you had from a tin years ago... this is MUCH more delicious!!

Ingredients

  • 200g Arborio Rice
  • 1 litre (maybe less) Semi Skimmed Milk
  • Vanilla Pod
  • 140g Sugar
  • Jam to serve

Bring the Milk, Vanilla Pod, and Sugar to the boil gently

Add the Rice and simmer for 40 minutes or so – you want a little bite left – but the rice should be properly cooked

By this point the whole Rice Pudding will be thick and creamy, and perfect for serving in a bowl with a big teaspoon of (preferably Tiptree Wilkins) Strawberry Jam

I like it a bit thicker – but if you want a gloopier Rice Pudding you can add a dash more milk and just make sure it is still hot.  This is a good pudding for making early, and then heating up later
