Celeriac Remoulade

This is delicious at all times of the year - is strangely good with beef or game stews - also with summer barbeques (although they seem a long way away looking at snow falling outside!). Celeriac Remoulade is also good with fish, smoked and fresh salmon in particular... and this dish isn't so unhealthy at all if you don't use bought mayonnaise.

Ingredients

  • Celeriac
  • 1 Red Onion
  • Parsley
  • 2 or 3 tsp Dijon Mustard
  • 3 or 4 tbsp 0% Yoghurt
  • 1 Clove Garlic
  • 1 tbsp Homemade Mayo
  • Extra Virgin Olive Oil
  • Lemon
  • Maldon Salt & Pepper

Cut all the skin off the Celeriac and cut it into food proessable chunks

Grate it in a food processor and put a little Lemon Juice on it (stops it colouring)

Finely slice a Red Onion

Add Celeriac and Onion to a bowl… remove any large chunks that have been missed by the food processor

Add a few teaspoons of Dijon Mustard – 3 tbsp of 0% Natural or Greek Yoghurt – 1 tbsp of homemade Mayonnaise a crushed Garlic clove – a drizzle of Olive Oil – the juice of half a Lemon – a good grind of Salt and Pepper and give the mix a really really good stir

Taste and season – you might want more Yoghurt to make it creamier – or some more Garlic or Mustard if it needs more taste!

Add chopped Parsley at the last moment

Perfect served with Salmon…. or a wintery Stew
