Courgette, Chive & Red Onion Salad

This is a great salad for the winter - goes particularly well on the side with some pasta, or with a chicken stew. Is also excellent on the side with a bean casserole; you can serve it separately but opt to add ribbons of courgette to a hot bowl of stew, (almost) fondue style.


  • 1 large Courgette
  • Half a Red Onion
  • Bunch Chives
  • Red Chilli (optional)


  • 2 tbsp Extra Virgin Olive Oil
  • 2 tsp Wholegrain or Dijon mustard
  • Half a Lemon
  • 1 tsp Honey

Wash a large Courgette and using a vegetable peeler, peel it into long ribbons

Finely chop half a Red Onion

Wash and chop some Chives

Finely chop a little Red Chilli

Serve the Courgettes, piled on a plate with the chopped Red Onion, Chilli and Herbs sprinkled on top

Just before serving – dress with a Mustard Vinaigrette [2 tbsp Extra Virgin Olive Oil, 2 tsp Wholegrain or Dijon mustard, juice of half a Lemon, 1 tsp Honey - whisked together in a bowl]
