Quick Mexican Style Salads

This simple combination of ingredients makes for a Mexican style feast... Enjoy these mini salads with beef brisket chilli and long grain rice, or with some chargrilled vegetables and wholegrain flatbreads. Either way, they're healthy, tasty and super quick to make in a summer hurry.


  • Lettuce
  • Cucumber
  • Jar of Chilli Peppers
  • Coriander
  • Red Onion
  • Broad Bean Leaves
  • Yellow Pepper
  • Green Pepper
  • Red Chilli
  • Fresh Mint
  • Fresh Coriander
  • Lime (to serve)
  • 0% Greek Yoghurt (to serve)

To make these simple mini salads…

Cucumber & Mint… Wash and slice the Cucumber into batons, and serve covered in chopped fresh Mint

Onion & Coriander… Finely chop some fresh Coriander, some Broad Bean Leaves and a little Mint and add to some diced Red Onion

Pepper Relish… Very finely dice a Yellow and a Green Pepper.  Serve with a little diced Red Onion and some chopped Red Chilli

Mini Peppers in a jar… These are all over the place in shops that sell food that is Mediterranean in style, either in brine or some kind of pickled vinegar, and they’re good drained and served in a bowl with other mezze dishes

Fresh Mint and Coriander leaves work brilliantly with all these flavours…

Freshly squeezed Lime over everything is a must – and extra chopped fresh Red Chilli might be right up your street…. Greek Yoghurt is also a good component here

Either way these are great salads to serve spooned onto Lettuce leaves
