Tomato, Onion & Balsamic Vinegar

This is a gratifyingly quick and easy salad to make; and predictably, is as healthy as ever! These sliced beef tomatoes with onion, basil and balsamic are the perfect friend to pasta and pasta - but also work well as a brilliantly Mediterranean side for BBQ afternoons...

Ingredients

  • Spinach
  • Beef Tomato/es
  • Red Onion
  • Basil
  • Balsamic
  • Extra Virgin Olive Oil
  • Black Pepper

Wash and carefully dry the Spinach leaves

Slice the Beef Tomato and Red Onion into thin slices

Finely chop some Basil (or other herbs would work, depending on what you’re eating)

Arrange the salad so the Spinach is at the bottom, covered with Tomato slices and then the Red Onion

Drizzle a little Balsamic over the top (1 tbsp?) and a little Olive Oil too

Sprinkle some Basil on the top, and enjoy with a crunch of Black Pepper and something simple, like grilled white fish, or a bean burger BBQ
