Sweetcorn Fritters

These are super good - and although possibly not totally cholesterol free - still not unhealthy for you. Corn is great, both nutritionally and taste wise, and these fritters are truly delicious with some chilli sauce, or some mango chutney and natural yoghurt.

Sweetcorn – 2 or 3 Corn on the Cob

Batter:

  • 1 Whole Egg
  • 120g Self Raising Flour
  • 150ml Milk
  • 30ml Water
  • 30ml Rape Seed Oil
  • 1 tbsp Baking Powder
  • 2 tsp Curry Powder

Mix all your batter ingredients together and leave in the fridge for half an hour or so

Meanwhile, cut the sweetcorn off the fresh cobs.  If you can’t get corn on the cob – tinned is fine (you can also throw in half a can of the creamed corn, which adds some sweetness)

Mix the corn into the batter and heat some oil in a large frying pan

Spoon the mix into patties in the pan – I like them slightly smaller (about 6cm across) – but bigger is good too

Fry on a medium heat for 3 or 4 minutes on each side or until golden

Rest on kitchen paper – and if you want to make them early and heat them up later, you can do this (give them 10 mins or so at 180˚)

Great served with rice and pickles and yoghurt… or as a picnic dish with a bottle of chilli sauce for squeezing!
