Sweet Potato Croquettes

We ate a less good (and much less healthy) version of these sweet potato croquettes out at a restaurant recently. Theirs featured chorizo and probably should have been much nicer than they actually were... Ours (slimmingly) didn't feature any chorizo at all and were much much nicer than either the restaurant's or any of us were indeed expecting for supper that day. They were also surprisingly easy to cook.

Ingredients

  • 2 or 3 Sweet Potatoes
  • 1/2 Onion
  • Cider Vinegar
  • Fresh Red Chilli
  • 2 tbsp Gram Flour
  • Breadcrumbs
  • Salt & Pepper
  • Herbs – Parsley or Coriander

Very finely chop the half an Onion and put it in a bowl with a couple of spoons of Cider Vinegar.  Toss the Onion around in the Vinegar to make sure it is soaking the flavour up while you prepare the rest of the Croquettes

Chop the Red Chilli and Herbs very finely and set aside

Peel the Sweet Potatoes and steam them over boiling water until soft enough to mash

Mash in the pan

When very smooth – add 2 tbsp Gram Flour and beat into the Sweet Potatoes.  Also add the drained Onions and the Red Chilli and some chopped fresh Herbs (Parsley or Coriander would be good).  Mix well.  If the mixture is too wet – add another spoon of Gram Flour, or some Breadcrumbs

Now shape the mixture into Croquette shapes and then coat them in Breadcrumbs.  The mixture should be wet enough for the Breadcrumbs to stick very easily

Put each Croquette on a baking tray to firm up – you could refrigerate them for a while even

When you’re ready to cook – pre-heat the oven to 180˚c and cook them for 25 minutes or until golden and crunchy on the outside.  These are great with a lemon dip – or with some chilli sauce!
