Steamed Kale with Tomatoes

Vegetables are a big part of the eating a lower-cholesterol diet thing - and in the vegetable category as it were, kale is a clear winner. Wikipedia cites it as being full of lots of brilliant vitamins (beta carotene, vitamin K, vitamin C, lutein, zeaxanthin and calcium), and also describes it as containing lots of "a chemical with potent anti-cancer properties"... Whether this is true or not, kale is absolutely delicious; and it definitely seems worth taking a chance on something rumoured to be so good for you!

Ingredients

  • Kale
  • Tomatoes
  • Red Onion

Dressing

  • Dijon Mustard
  • Red Wine Vinegar
  • Extra Virgin Olive Oil

You don’t need to cook Kale for long – so get everything ready in advance

For the Dressing – mix a teaspoon or two of Dijon Mustard with one of Red Wine Vinegar and a good drizzle of Extra Virgin Olive Oil

For the topping – finely chop a large Tomato and half a Red Onion

When you are ready to cook – get a couple of cm of water boiling in a frying pan – and pop in the Kale

You’re aiming for part boiling, part steaming – it will really only need a couple of minutes

Lift out with tongs and dry gently, and serve with the Red Onion and Tomato sprinkled on top

Drizzle over the Dressing – or alternatively just squeeze some Lemon Juice over the Kale and follow with a drizzle of Olive Oil and some Salt & Pepper

Kale is delicious with all sorts of things – grilled or fried fish or chicken would work here – and combined with some Roasted Potatoes this would be great on its own
