Squashed Tomato Salad with Herbs

This is the perfect salad to make with slightly squashy tomatoes... the red onion, chilli and lemon juice all come together in this deliciously fresh and light salsa, which goes brilliantly with lots of dishes (white fish, bean burger, pasta). As well as being really tasty, it is also very healthy and cheerfully low in cholesterol!

Ingredients

  • Tomatoes (Cherry?!)
  • Half a Red Onion
  • Half a Red Pepper
  • Fresh Red Chilli
  • Fresh Herbs (Parsley, Chives)
  • Extra Virgin Olive Oil
  • Lemon
  • Salt & Pepper

Wash and chop the Tomatoes – use any kind, sweet and squashy ones are good here…

Finely dice some Red Onion, some Red Pepper and some fresh Red Chilli

In a bowl, mix the Red Onion and Pepper mixture with a good drizzle of Extra Virgin Oil, the juice of half a Lemon and some Black Pepper (use a pinch of Salt if you like, I don’t always…. is good zestier I think?!)

Taste and season… If you don’t have any Lemon – Lime would work well here – or even better, some Raspberry & Apache Chilli Vinegar (you can buy this from Womersley, they make the nicest vinegars…)

Leave the Dressing with the Onions to marinade for half an hour or so before mixing the Tomatoes in

Just before serving, chop some fresh Herbs and stir these in too – Parsley or Chives are particularly good with this combination, but you could use Basil or Coriander or Dill etc…

This is a great Salad (or Salsa) to go with lots of dishes – not least a good risotto or pizza
