Spring Onion & Lettuce Salad

Hardly qualifying as a recipe, this combination of salad ingredients is deliciously simple and healthy. It's easy and quick to get everything ready, but the salad still looks great, and is fun to share... It also goes well with a whole feast of dishes on the side.

Ingredients

  • Spring Onions
  • Lettuce
  • Cherry Tomatoes
  • Cucumber
  • Peppers (Piquante?! or Chilli?!)

Dressing

  • Lemon (half)
  • 1 tsp Dijon Mustard
  • 1 tsp Clear Honey
  • Drizzle Extra Virgin Olive Oil
  • Dash Raspberry Vinegar (or Red Wine)

To prepare the Salad, wash the Spring Onions carefully; trim them and put them in a bowl (or a glass, as here)

Wash the Lettuce and dry the leaves gently, serving them whole and on a plate

Wash the Cherry Tomatoes and again serve them whole, together with the Lettuce

Wash and slice the Cucumber and serve it with some sliced Red Piquante Peppers or Chilli… whatever you fancy

For the Dressing…. whisk the juice of half a Lemon with a really good drizzle of Extra Virgin Olive Oil, 1 tsp Dijon Mustard, 1 tsp Clear Honey and a dash of Raspberry Vinegar from Womersley (love their spicy vinegars…!).  The whisking here is important to get a creamy dressing

Serve the dressing in a bowl or jug so that everyone can help themselves

This is a fab salad for barbeques, burgers, steaks etc.  Also good on the side with pizza…
