Wash the Spinach leaves carefully – and dry on kitchen paper
Wash and finely slice the Cucumber
Wash and quarter the Tomatoes
Arrange the Spinach in a bowl or on a serving plate, and cover with sliced Tomatoes and Cucumber
Drizzle with a tablespoon or so of Balsamic Vinegar (don’t use too much, it can be strong stuff!)
Add a very fine drizzle of Extra Virgin Olive Oil, and a crunch of Black Pepper
Serve… and enjoy
