Simple Romaine Salad

This is hardly a salad, let alone a standalone recipe - and yet in its simplicity there is real deliciousness... because this is a great side dish, and a friend to cooking from all over the world; Italian, Middle Eastern, British, Greek, Moroccan, Indian, whatever. It is fresh, crunchy and sweet - and (obviously) very healthy!
Ingredients
- Romaine Lettuce
- Red Onion
- Red Pepper
- Cucumber
- Low Fat Dressing
Wash the large Lettuce leaves but leave them whole (you could use Romaine, Cos, Gem Lettuce – whatever you fancy)
Wash the Red Pepper and Cucumber and slice finely
Slice the Red Onion too
Lay the Romaine Lettuce out and sprinkle the crunchy veg on top
Dress with something zingy (Lime Juice & Rape Seed Oil dressing, maybe with a spoon of Dijon mixed in?) or something creamy (like a low cholesterol Ranch style dressing?)
