Simple Brill

Brill is an expensive fish - but when they have it at the fishmongers, straight off the boat, I sometimes find it hard to resist. Part of the Turbot family - it is really tasty, and definitely worth trying every so often as a treat. Simply floured and fried I think is best, and also served with something simple so that the fish really stands out flavour wise.
Ingredients
- Fresh Brill
- Plain Flour
- Salt & Pepper
- Olive Oil
Get your fishmonger to fillet the Brill
Coat each fillet in Plain Flour seasoned with Salt & Pepper
Heat some Olive Oil and when hot – add the fish
Give the fillets 3 or 4 minutes on each side – more or less depending on how big the pieces of fish are
Drain quickly on kitchen paper and serve immediately with salad and roasted potatoes (maybe a dollop of Homemade Mayonnaise or Greek Yoghurt). Brill would also work well with some Borlotti Beans…
