Simple Asparagus

British asparagus is in season, and is (as always) delicious! It's healthy, nutritional and tastes decadent however you serve it; squeeze of lemon, poached egg, mimosa dressing (I could go on...?!). Alternatively these spears would be a great side to frittata.

Ingredients

  • British Asparagus
  • Lemon?

Creamy Dressing

  • Half a tsp of Homemade Mayo
  • Juice of Half a Lemon
  • Long drizzle of Olive Oil
  • Extra crushed Garlic (optional)
  • Jar to shake up dressing!

Bend the Asparagus to snap off the stalky end

Wash and dry the Asparagus too

Heat your griddle up – and give the Asparagus spears about 5 – 8 minutes or until they are just cooked (but with some proper bite left!).  Turn them occasionally while cooking

If you don’t have a griddle, a dry pan would work (or you could just use a tiny brush of Olive Oil, but not much)

Serve the Asparagus immediately, on their own with some Lemon…

OR you could make a creamy (and healthy) Dressing by putting all these ingredients in a jar and shaking (with the lid firmly ON!)… Use half a teaspoon of Homemade Mayo, the juice of a Lemon, a really long drizzle of Olive Oil (4 tbsp maybe?!) and some extra crushed Garlic if you like your dressings garlicky
