Put the Salmon fillets onto a baking tray lined with greaseproof paper
I sliced a couple of pieces of Chilli to put on top
I used a drizzle of Pomegranate juice and a squeeze of Grapefruit juice to pour over the Salmon here – but only because I used both for a salad; normally a quick squeeze of Lemon or Lime Juice and a quick jot of Olive or Rape Seed Oil
Season well with Maldon Salt and Pepper
Bake in a pre-heated oven for 10-20 minutes until the fish is just cooked
Perfect served with a Pilav and a squeeze of Lemon
(This oven baked salmon is also good with Celeriac Remoulade and some Roasted Potatoes)
