This recipe might sound stunningly unimaginative, but actually it is a great salad to go with spicy food - of both Indian and Oriental leanings... With some Chilli Sauce and a squeeze of Lime, this goes brilliantly with Chinese style dishes or stir fries; and with some yoghurt and mint it goes equally well with a curry and some rice. Something about the combination of the cucumber, onion, coriander and piquante peppers that makes for a really healthy, happy and almost exotic (still low cholesterol!) taste.
Lay the Salad Leaves out on a plate or serving dish
Wash and slice the Cucumber into long, thin batons
Slice the Red Onion
Use a few Piquante Peppers (from a jar or tin) and slice them into much smaller pieces
Lay the chopped ingredients out over the salad
Chop the fresh Coriander and sprinkle all over the salad
Finish with a massive squeeze of Lime and a little drizzle of Rape Seed Oil
Good with yoghurt, chilli sauce and maybe some croquettes or fritters?!
