Pre-heat your oven to 175˚c and roast your halved Tomatoes on a baking sheet lined with greaseproof paper. Brush the Cherry Tomatoes quickly with a little Olive Oil; and sprinkle with some Salt before putting them in the oven
After 25 mins, check them regularly – you want them dried out and a little charred – but not burnt! They could take up to 40 mins of cooking time, probably less
In the meantime, boil the kettle and cover the Peas in a bowl in water – leave them for 5 mins before draining
Spread out Lettuce Leaves on a plate – add chopped Red Onion and Cornichons/Gherkins. Sprinkle the drained Peas and the cooked Tomatoes over the salad, and serve with a drizzle of Lemon Juice and Olive Oil, some Salt and some Pepper
