Halve the Tomatoes and roast on a baking tray brushed with a little Olive Oil and sprinkled with a little Maldon Salt… Give them half an hour at 180˚c, although they might take a little longer. You’re after nicely roasted, sweet and slightly charred Tomatoes… not burnt!
Meanwhile, wash your Lettuce and arrange on a plate. Slice your Red Onions and Red Pepper finely and scatter over the lettuce. Wash and chop your herb.. Coriander is good with Oriental or Middle Eastern dishes; Basil or Parsley are good with Italian or European Dishes
When your Roasted Tomatoes have cooled down – lay them over the salad and dress with a really mustardy, olive oil-ey dressing and lots of lemon juice. This is great with lots of pasta or pizza dishes (use Basil) and equally delicious with a pilav or a piece of grilled meat (Coriander or Mint would be delicious)
