New potatoes are great for this but any will do!
Cut each washed potato in half lengthways
Place them skin side down on a tray covered with greaseproof paper (you can brush oil on the paper; if I am in a rush I don’t bother)
Brush potatoes with a bit of good quality olive oil and sprinkle salt (and pepper) over them (thyme is good too)
Cook for 30 – 40 minutes at 200˚c until golden and crispy
