Roasted Half Potatoes

Who says that Roast Potatoes are bad for you? These are cooked in a small amount of olive oil and they are delicious, especially with pepper too. Husband ate these prolifically during the first two months of not eating cholesterol and still lost a stone and a half, so they can't be too unhealthy!

Ingredients

  • New Potatoes!

New potatoes are great for this but any will do!

Cut each washed potato in half lengthways

Place them skin side down on a tray covered with greaseproof paper (you can brush oil on the paper; if I am in a rush I don’t bother)

Brush potatoes with a bit of good quality olive oil and sprinkle salt (and pepper) over them (thyme is good too)

Cook for 30 – 40 minutes at 200˚c until golden and crispy
