Red Pepper, Cucumber & Coriander Salad

This is a deliciously fresh and light salad combination for all sorts of Asian or Oriental style dishes... Maybe to serve with some sticky rice? Or some barbequed chicken with ginger, chilli and garlic? A piece of fresh grilled tuna would also taste excellent with this healthy (and brilliantly quick to prepare) salad.

Ingredients

  • Lettuce
  • Red Pepper
  • Fresh Red Chilli
  • Cucumber
  • Red Onion (Spring Onions would be great)
  • Coriander
  • Lime
  • Rape Seed Oil

Wash the Lettuce

Wash and slice the Red Pepper and as much Chilli as you dare

Wash and finely slice the Cucumber

Peel and finely slice the Red Onion (Spring Onions would be even better)

Wash and chop the fresh Coriander

Arrange the Salad on a plate, with the Lettuce covered in an artistic array of Cucumber, Pepper and Chilli, Red Onion and Coriander leaves…

Serve with a drizzle of Lime Juice, some Black Pepper and maybe a little Rape Seed Oil
