Raspberry Iced Yoghurt

Traditional ice cream is definitely off limits if you are trying to lower your cholesterol; but this delicious dessert made with frozen raspberries and yoghurt is definitely as luxurious tasting as ice cream, and brilliantly, much healthier for you! This 'ice cream' works especially well with frozen red fruit... raspberries, blackberries, blueberries or strawberries.

Ingredients

  • Frozen Raspberries
  • 0% Greek Yoghurt
  • Sugar

Use as much Yoghurt and Fruit as you want to create ‘Ice Cream’…  (0% Greek Yoghurt is best for keeping it healthy…)

The best fruit to use are Frozen Raspberries… although Frozen Summer Fruits or Berries are good too

Use two thirds Yoghurt, one third Frozen Fruit and a couple of teaspoons of Sugar… Whizz everything up in a food processor until smooth; this should be quite quick (you want it to stay really cold and not whizz around so much that it warms up)

Taste and season; you might want to add a little more Sugar – also more Yoghurt if you want it creamier and / or more Fruit if you want it fruitier

Serve immediately… and enjoy!
