Pickled Red Onion and Orange Salad

Finding good salad combinations to go with some Asian or Chinese style cooking can be tricky; but this deliciously piquant salad is brilliantly useful and goes with a whole range of food. It's good with Chinese Five Spice chicken, or on the side with curry recipes; but goes equally well on the side with some grilled white fish and some basmati rice. Who said salad wasn't exciting?!

Ingredients

  • Lettuce
  • Red Onion
  • Cider Vinegar
  • Cucumber
  • Orange

Finely slice a Red Onion or two… Put the slices in a bowl and add a tablespoon (per Onion) of Cider Vinegar (or White Wine Vinegar would do).  Mix so that all the Onion slices are covered in Vinegar and leave for half an hour or so before serving

Wash the Lettuce leaves but leave them whole

Wash and slice some Cucumber

Slice the skin off an Orange, remove the pith and slice finely in circles

Serve all the components in individual bowls, or on one large plate…

This is an excellent salad to serve with some slow cooked Curried Lamb…
