Wash all the salad
Chop the Cucumber
Rinse and drain 1 or 2 teaspoons of Capers before chopping them finely
Slice the Red Onion
Drizzle with some Lemon Juice (or Lime, or White Wine Vinegar) and a little Rape Seed Oil
Peashoot, Onion & Caper Salad
This salad is light and fresh, and because of the lovely little peashoots - it is particularly tasty with fish or chicken dishes. That said, a bowl of pasta or some pizza would love this as a side too...
