Pea Salad

This is a delicious salad in its own right; but is especially delicious with some fish and chips (of the healthy variety, of course...).

Ingredients

  •  Lettuce
  • Peas
  • Red Onion
  • Cucumber
  • Pickled Onions
  • Peashoots, Mint, Parsley

Wash and gently dry the whole Lettuce leaves

Wash and finely dice some Cucumber

Finely chop some Red Onion

Drain some mini Pickled Onions (Gherkins or bigger Pickled Onions would be good too, chopped up maybe?!)

Blanch the fresh or frozen Peas for a minute in boiling water before draining, rinsing under cold water in a sieve and then gently patting dry with kitchen paper

Wash and roughly chop some fresh herbs… I used Peashoots and Mint leaves

Lay the Lettuce leaves out on a plate and then sprinkle the other chopped ingredients evenly over the leaves…

Make a dressing of 1 tbsp Lemon Juice, 2 tbsp Rape Seed Oil, 1 tsp Dijon Mustard and a dash of Malt Vinegar – whisk the ingredients together and dress the Salad just before serving

(A large wedge of Lemon and some Olive Oil would do just as well do dress this!)

Is particularly good with Fish and Chips, although works well with a Pork Chop too…
