Pavlova

This meringue is a great pudding for anyone trying to avoid fat but who still likes desserts... With fruit on its own this is excellent - but with some 0% fat yoghurt it is even more delicious. Strawberries, raspberries and kiwi are best; and not a jot of cholesterol either!

Ingredients

  • 3 Egg Whites
  • 170g Icing Sugar (sifted)
  • 1 tsp Cornflour
  • 1/4 tsp Vanilla Extract
  • 1/2 tsp Distilled White Vinegar
  • Fruit
  • 0% Greek or Natural Yoghurt

[This is my Mum's recipe - have no idea where she got it from; but she swears by this as the best Pavlova you can make... and it is just that]

Pre-heat the oven to 150˚c

Separate the Egg Whites and whisk them until stiff and dry

Add half the Icing Sugar to this mixture and re-whisk until even stiffer and now it should be shiny too

Add to the mixture the 1tsp Cornflour, 1/4 of Vanilla Extract and the remaining half of the Icing Sugar and fold these ingredients into the Egg Whites

Line a baking tray with greaseproof paper and spoon the mixture into whatever shape you fancy – a bowl shape works best.  Sometimes I try and leave a hole in the middle for artistic purposes (and/or fruit)

Turn the oven down to 140˚c and cook for 1 hour

If you can – the best thing to do is leave this in the oven overnight (or for a few hours) to cook down and dry out properly

When you are ready to eat – smother in fruit and yoghurt and enjoy!
