Paprika Roasted Potatoes

Super quick - super delicious. These paprika roasted potatoes can transform something really simple like grilled mackerel or sardines, and are great re-fried the next day with an egg on top of a piece of wholegrain toast. They also go really well with Spanish style food or tapas; frittata with these as a component would be very tasty.

Ingredients

  • Potatoes
  • Paprika
  • Smoked Paprika
  • Chilli Powder (optional)
  • Salt
  • Olive Oil

Scrub the Potatoes

Chop them into neat cubes, around 2cm square, maybe a little bigger

Put all the cubes of Potato into a large roasting tray (make sure they have plenty of room around them)

Sprinkle a couple of teaspoons of Paprika onto the Potatoes – also some Maldon Salt

If you like smokey flavours, add a pinch of Smoked Paprika too!

Add a pinch of Chilli Powder if you’d like some heat

Shake the Potatoes around and roast for 30 mins at 200˚c or so until they are cooked with crunchy edges

Shake again mid way through cooking to make sure the Potatoes roast evenly, also that the Paprika is evenly distributed!

Serve immediately with some Homemade Mayonnaise or some Greek Yoghurt (0% of course)
