Preheat your oven to 180˚c
Grease and line a cake tin (25cm ish)
Bring the Milk, Lemon (or Orange) Rind, Vanilla Pod, and Sugar to the boil gently
Add the Rice and simmer for 20 – 25 minutes
Cool the Rice and remove the Rind
Beat the Egg Yolks – Whisk the Egg Whites
Add Yolks to the Rice mixture, adding the Raisins and a dash of Orange Liquer (I only use a dribble) – then FOLD the Egg Whites in gently
Pour into the cake tin and bake for 1 hour until golden and super delicious. Dust with Icing Sugar and Orange Zest when you serve it
