Mini Turkey Burgers

These burgers are delicious - easy to make - and very lean in terms of cholesterol and fat generally... I think turkey might be even leaner than chicken. Enjoy with a homemade bread roll, some mustard and a dollop of 0% Greek Yoghurt... maybe a gherkin. Also a good salad.

Ingredients

  • Turkey
  • Thyme
  • Lemon Zest
  • Small Onion
  • Salt & Pepper

In a bowl, combine… the zest of 1 Lemon, a handful of fresh (or dried) Thyme leaves, 2 Cloves Garlic (crushed or finely chopped), a grated Onion and some Salt & Pepper

If your butcher will mince Turkey for you – brilliant…. If not, whizz your turkey meat up in a food processor (and wash the processor super carefully afterwards)

Mix the Turkey mince with the other ingredients

Make the Turkey Burgers, shaping each pattie in a similar size so they cook evenly

Put on a plate and in the fridge to firm up for an hour or so before cooking.  Remove from the fridge a while before cooking (so they are at room temperature)

When you are ready to eat – heat some Olive Oil in a pan, and when hot, add the burgers – giving them 6 or 7 minutes on each side over a medium heat.  When the turkey is properly cooked (no pink) – take them off the heat and drain on kitchen paper

Rest for a few minutes before serving.  These Turkey Burgers are great with traditional burger stuff (rolls, mustard etc) but are also good with a Vegetable Broth or some Pilav and a dollop of 0% Greek Yoghurt
