Very finely dice the Red Onion, Yellow Pepper and Red Onion
Make sure all the ‘dice’ are the same kind of size and similarly small…. you don’t want the Salsa to be too chunky
Quarter the Cherry Tomatoes
Chop the Red Chilli into (tiny) little pieces
Put the diced or chopped salad into a large bowl and squeeze Lime all over – add a crunch of Black Pepper and a half or a whole crushed clove Garlic
Mix up the Salsa
Leave to ‘marinate’ for a few hours in the fridge
Chop some Chervil (or any fresh herb that goes with your meal) and mix up in the Salsa before you serve…
Excellent with Jerk Chicken, with Bean Burgers, with Kebabs and Pilav….
