Lime & Coriander Dip

This is a fabulously healthy and low cholesterol yoghurt dip that works with all sorts of dishes as a dressing or sauce. Homemade chicken nuggets with this would be delicious, as would grilled fish or vegetable fritters (courgette, sweet potato, corn). Is equally good as a dip with crudités like carrot, celery and cucumber. If you want to go crazy - add some chopped fresh chilli!

Ingredients

  • Zero Fat Natural Yoghurt
  • 1 Clove Garlic
  • Handful Coriander
  • Lime
  • Black Pepper

Finely crush the Garlic

Wash and finely chop the Coriander

Mix up the Yoghurt, a massive squeeze of Lime and the Garlic and Coriander

Season with Black Pepper and taste

Add a little of what you think it needs

This is too good with fritters – is great with flatbread too – delicious with some sumac chicken – on the side of a bean casserole
