Lettuce with Peppers & Orange

Sweet and zingy - this pepper and orange salad is a light and refreshing side side dish that loves to go with all sorts of things, including fish and chicken. On its own with some rocket potatoes or some pilav this salad would also work really well.

Ingredients

  • 1 Lettuce
  • 1 Orange
  • 2 Red or Orange Peppers
  • 1 Red Onion
  • Tomatoes
  • Cider Vinegar
  • Olive Oil

Finely dice the Peppers

Finely dice the Red Onion

Wash the Lettuce and chop the Tomatoes

Chop the Orange into small cubes (getting rid of any pith) and reserve any juice leftover from chopping

Heat a pan and add the finely diced Peppers and a third (or so) or the diced Red Onion

Cook on a medium heat in a little Olive Oil with a sprinkle of Salt

When soft and starting to blacken around the edge – throw in a dash of Vinegar… Cook off for a moment or two and then turn off the hob and let the Peppers cool a little

Meanwhile, arrange the Lettuce on a serving plate; scatter the remaining raw Red Onion, the Tomatoes and the chopped Orange on top

Finally add the cooked Peppers, with all their juices if any are left

Serve with a drizzle of Olive Oil and any remaining juice from the Orange
