Herb & Red Onion Salad

Use whatever herbs you have to hand... I grew these in old tomato punnets in the garden, and they were much tastier for being just picked, but any salad leaves would be good here. The zesty lemon and tasty red onion make a delicious pair - and this is a super healthy way to dress grilled fish or barbequed vegetables. A drizzle of Olive Oil and a squeeze more lemon and you've got a brilliantly simple summer salad.

Ingredients

  • Rocket
  • Spinach
  • Basil
  • Parsley
  • Chives
  • Chard
  • (OR whatever Herbs or Salad you have)
  • Lemon
  • Red Onion
  • Extra Virgin Olive Oil

Wash the Herbs…

I used Rocket, Parsley, Chives, Mint, Spinach, Basil and some baby Chard – use whatever you have (Parsley, Mint and Perpetual Spinach are good for window sill planting if you don’t have a garden…)

Finely slice a couple of pieces of Lemon and cut them into small chunks

Finely chop some Red Onion too (about a half?!)

Arrange the Herbs in a bowl or on a plate, and sprinkle the Lemon and Onion pieces over the Salad

[NB I like Lemon like this - but you may want to griddle or dry fry it quickly on a high heat to give it a charred flavour...]

Serve with an extra squeeze of Lemon and a drizzle of Olive Oil

This Herb & Red Onion Salad would be a great dish for enjoying with flatbread and some tahini sauce, maybe some BBQ’d veg or some falafel?!
