Haricot and Courgette Soup

I say soup, but really this is more of a casserole, definitely substantial enough as a main meal, and especially delicious served with some homemade bread to dunk. It is light and fresh, but at the same time very soothing and calming; great for easy and quick mid-week cooking.

Ingredients

  • 1 large tin Haricot Beans
  • 1 Red Pepper
  • 1 Large Onion
  • 1 Courgette (more if they’re tiny)
  • 2 Cloves Garlic
  • 1 tsp Dijon
  • Splash of Vermouth (or White Wine)
  • 450 ml (ish) Veg or Chicken Stock
  • Parsley (to serve)
  • Olive Oil]
  • Salt & Pepper

Prepare the Vegetables… finely slice the Onion and Courgette, dice the Red Pepper and crush the Garlic

Heat a saucepan and add some Olive Oil… when hot, add the Onions and Red Peppers.  Gently fry them for 5 or 10 minutes until they are soft and delicious.  Add the Garlic and Courgettes and cook for a few minutes, just until the Garlic looks like it might turn a little brown… Before this happens, add a big splosh of Vermouth (or a glug of White Wine; even 1 tbsp White Wine Vinegar would do); also a teaspoon or two of Dijon mustard

Cook off the alcohol and add the Stock… Bring to the boil and simmer for 10 minutes.  Add the drained Beans and cook for another 5 minutes

Serve with fresh Parsley and season to taste with lots of Salt and Pepper (don’t use Salt earlier, the Beans might go a bit tough)

(NB – if you like your Courgettes with a bit of bite – just add them at the end with the Beans)

This healthy Haricot & Courgette Soup is delicious with flatbread or rolls… also with some paprika roasted potatoes. 

Is also very good with a slice of ham or cold roasted chicken.  Also some grilled fish…
