Green Beans with Chilli

These delicious (and terribly healthy) green beans are spicy, sweet and genuinely much more cheerful and fun than some green beans, particularly those of a boiled variety... This is a great dish to have with plain rice - and is equally delicious cold as a salad.

Ingredients

  • Fine Green Beans
  • 1 Red Onion
  • 2 Cloves Garlic
  • Fresh Red Chilli
  • Red Wine Vinegar
  • Olive Oil
  • Fresh Herbs (optional)

Wash the Green Beans

Finely chop a small Red Onion, half a fresh Red Chilli (ish) and a clove or 2 of Garlic…

Heat a tiny amount of Extra Virgin Olive Oil in a pan and add the Green Beans

Give them a minute or two – on a fairly high heat – and let them catch slightly (tiny bit of charred-ness is no bad thing here)

A couple of moment in, add the Onion, Garlic and Chilli – and stir a bit on the heat

Add a splash of Red Wine Vinegar and keep stirring – so that the Vinegar cooks off and coats everything in the pan

Less than 5 minutes after starting to cook these Beans, they should be ready!

And are delicious when served with grilled chicken, grilled fish – or some mezze
