Heat some good olive oil in a pan
When hot, put in your onion (sliced) and your butter beans
Give them a couple of minutes until the beans are starting to brown and the onion is soft
Add your chopped garlic, a handful of spinach, a squeeze of lemon and stir for a minute
Pour into a bowl to serve – sprinkle with salt, pepper, lemon juice and a handful of basil leaves (or any herb you fancy, dill is good)
Serve!
